Bacon and Guacamole Deviled Egg Recipe

Deviled eggs need not be boring. This classic protein staple can be transformed by changing up the filling and using fun toppings. My favorite way to enjoy this snack? Bacon and guac! The creamy healthy fats from the avocado provide a guilt-free richness, and a sprinkle of crunchy bacon provides the perfect finishing texture. Then add a sprinkle of smoked paprika and you're set!

How to Make This Recipe

The hardest part about deviled eggs is hard boiling all the eggs! Save time and your sanity on this recipe using Trifecta pre-cooked eggs instead. 

Ingredients 

To make this recipe you'll need:

  •  6 Hard Boiled Eggs
  • 1/4 cup non-fat Greek yogurt
  • 1 Avocado
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon jalapeno, diced
  • 1 tablespoon red onion, diced
  • 1 tablespoon lime juice
  • 2 strips bacon, cooked and crumbled
  • 1/2 teaspoon smoked paprika or chili powder
  • 1 teaspoon sea salt

Instructions

Scoop the yolks out of the egg halves and place half in a medium sized mixing bowl. Discard the remaining or save for later. 

Mash the yolks with a fork and mix with the avocado and yogurt until smooth.

Adding yogurt help keeps the guacamole from turning brown!

Scoop the seeds out of the jalapeno and dice into small piece. Setting aside 1 tbsp. Discard the rest or save it for another recipe. Feel free to add a bit more to increase the spiciness. 

Wash and finely chop the cilantro, including some of the stems. Set aside some of the leaves for garnish. 

Dice the diced onion and set aside 1 tbsp for mixing. 

Add the jalapeno, onion, and cilantro to the avocado mixture and stir to combine. Add lime and season with salt to taste. 

Place about one tablespoon of the mixture back into the holes left by the yolks in the eggs and serve garnished with bacon and a pinch of smoked paprika. Garnish with cilantro!
